As promised I am going to share with you the recipe for the Scramble that I photographed for Wordless Wednesday. Honestly I did not really follow a recipe per say, I just went with an idea. We have been eating less meat as of late. Partially due to money and health, I also want to introduce the children to a wide variety of tastes & dishes.
A friend of mine makes this Tofu Scramble and it looked so good I had to try it. If you Google Tofu Scramble you get so many variations but the following is what I did.
I took firm tofu, cubed it and tossed it into the pan with soften onions in olive oil. Then I diced up some spinach, threw that in with mushrooms and canned diced tomatoes. Oh I tossed in some garlic & soya sauce as well. It is one of those dishes that you can clear out your fridge and toss in a variety of vegetables. I also grated a little cheese to top it off, making it a little more appetizing for my kids (which only worked for Ethan, Becca refused to try it, although I find if I present it a couple times she usually comes around).
We wrapped it up in a tortilla shell (then you can add hot sauce and salsa if you like yum!), making into a yummy breakfast burrito!
I have been really enjoying exploring new recipes and challenging myself beyond what I normally cook. This Saturday I am heading to the Farmer’s Market with a friend to get some local yummy goodness! This time of year is gloriuos in Canada for all the fresh local food.

Sounds yummy! I rarely use tofu - soy scares me. I make a lot of stir frys though. Right now I’m in to homemade pizza, paninis, zucchini and broccoli with hemp seeds in evoo and lots of smoothies. I go through phases.

It was tofu, not feta! I’m not a tofu fan, but might give it a try with chicken breast….. and feta!
I am so in need of the farmers markets. The problem here is that our really good ones are an hours drive out! I might try and go to the city one tomorrow and give it another try.
I go through phases with recipes. I’m loving fresh fish and salads at the moment and because I’m cook, the family has to have it too!

I cooked for 12 hours on Sun. Yuck! But I ended up with 12 frozen meals which will hopefully get us through soccer season, maybe beyond (a girl can hope can’t she).
My current favorite is anything that doesn’t involve inside cooking, usually grilled with the meat leftover salad the next day.

Hey Chelle, tofu is very healthy choice and we usually have it chinese style - cube it, gentle fried with minced pork and chinese dried mushrooms. Braised it and add in black sauce as well as oyster sauce.

You just about make me want to try tofu again, despite years of misses with it. People always swear they can make me love it, but I’ve yet to believe it, even after tasting their version.
But you’ve gotten my attention.
This week’s revelation has been sticky rice with mango (sticky rice cooked with coconut milk; mango on top; a great dessert!).
